I chose INFINITY as my logo because there are no limits to working with chocolate.
My biggest source of inspiration is my wife Christine, she never tires of supporting me and pushing me to my limits.
Call me a dreamer, sometimes, I even surprise myself. My mind runs riot when it comes to balancing flavours and decadence, like a match made in heaven. One might call me eccentric but HEY! everyone's has a little craziness in them. I wanted to create something different, something unique that cannot be found on the Island...and I did. I have met some wonderful bakers on the island, and they are fantastic at their crafts, I just want to be DIFFERENT.
I love cakes that are decadent, chocolatey, moist and rich .... as my wife would say, GOOEY. I live on a tropical island and what better place than Zanzibar to indulge in experiments with some exotic fruits and spices.
